Superfoods: Kale & Walnut Pesto

So how’s the New Year’s Resolutions going? If you’re anything like us, then you might have spent this week finishing off the last of the Christmas chocolates or comfort eating to get through the first week back at work. But we have a pressie for you! The yummiest and easiest of recipes made from Superfoods!

Impossible we hear you cry! What a con! You’re having us on! Nope, this recipe is ridiculously yummy, takes TEN MINUTES to prepare enough for up to FIVE meals, AND, its made from the healthiest, power-packing ingredients! Don’t believe us? Follow us….

Meet KALE AND WALNUT PESTO

What you’ll need: 

A food mixer – you could mash it all together by hand but it won’t give you the pesto sauce consistency you need, sorry!

2 cups of fresh basil

1 bag of kale

1 cup of walnuts

parmesan cheese

4 cloves of garlic

1 lemon

olive oil

salt and pepper to taste

½–3/4 c extra virgin olive oil

How to do it:

Put the walnuts, the zest of the lemon and the peeled garlic into the food mixer. Keep your finger on pulse and stop once you can see the ingredients are properly blended. Now add your basil, the juice of the lemon and your kale  and blend. Add the olive oil through the hole in the top of the blender as it’s doing its thing very slowly. Stop it occasionally and scrape the good bits off the side and the top, then mix together with your spoon. Add some salt and pepper to taste. You could add chilli here if you like a kick too. Add more oil until the consistency is right. Et Voila! Add some parmesan to it and put it into a container with a lid. Use this ridiculously tasty, yet healthy pesto on pasta, in risotto, on chicken, on fish… honestly, I even put it on toast instead of butter – YUM!
