1. Why not try finely chopping a handful of spinach and chuck it into some scrambled eggs. You could even chop up a bell pepper or some carrot for an added Beta Carotene boost.
2. Hardboil your eggs then slices them up along with some tomato and some fresh basil leaves, and a pinch of salt. Have it alone – boiled eggs really fill you up – or on a slice of wholemeal or rye bread. Yum.
3. Do a quick sauté or dry fry some chopped onions, some chilli, florets of broccoli, shred some potato and add some spinach or any other veggie you have in the fridge. Season with salt, garlic, and other seasonings of choice. Break an egg on top and cover your pan until your egg has cooked properly but let the yolk cover the veggies. Yum yum.
