Usually during the winter mornings, we tend to reach for porridge as our breakfast choice, as it’s warming and healthy and a undeniably a great way to start the day. But you know there are other, healthier options, right? Here are a couple of healthy breakfast alternatives using a surprise ingredient, to give a bit of variation to your winter breakfast ritual.
We all know that Quinoa is one healthy seed, bursting with protein and easy to use (though not so easy to cook well). It is also a good source of iron, potassium, magnesium, vitamin E and fibre.It has become a fantastic healthy alternative to rice, pasta and cous cous and can be cooked as a main or a side dish too. But did you know you can also make the scrummiest and healthiest of breakfasts with it?
Below are two breakfast quinoa recipes we found online which are easy, tasty and healthy. The key to using Quinoa for breakfast is to make a pot at the beginning of the week and keep it in the fridge, cold. That way, breakfast will only take you a few minutes to prepare every morning (we know your alarm goes off twenty minutes before it’s time to leave)!
If you own a skillet, this will be quicker as apparently they produce delicious quinoa bakes too. This recipe uses coconut oil, dates, some shredded coconut, and mixed nuts and it’s topped with fresh berries, the perfect boost your antioxidant intake.
Simply add some unsweetened Almond milk or Coconut milk, some cinnamon, nutmeg, honey and sliced fruit of your choice. And there you have it; a yummy cereal-style quinoa breakfast which is much healthier than shop-bought cereals, and in our opinion, much tastier too! You can literally add whatever you would add to your porridge, and your quinoa breaky will be a yummy, lower-caloried and healthier alternative! Who knew!
