Delicious Recipes: Kale, Carrot & Honey Fritters

Inspired by the Veggie Desserts blog we decided to scan the internet for one of our favourite delicious recipes –  a breakfast made with vegetables! Starting with your writer’s very own Kale, Carrot & Honey Fritters!

What better way to kick off a day than with a breakfast filled with nutritious and tasty veggies? Much better than stuffing your belly full of wheat, cheese and cereal!

Here’s what you’ll need:

  • 1/8 teaspoon ground ginger
  • 5 to 6 cups very thinly sliced kale ribs removed into thin ribbons
  • 4 carrots, peeled into ribbons with vegetable peeler
  • 1/2 cup all-purpose flour
  • 6 eggs, lightly beaten
  • Almond oil or coconut oil

Here’s how to make them:

To make fritters, toss the strips of carrot, kale, and honey together in a large bowl. Add flour and toss until vegetables are coated. Stir in eggs.
Heat a large heavy skillet over medium-high heat. If you don’t have a skillet a frying pan or wok will do. Add enough oil to coat the bottom of your choice of pan. Add 1/4 of the vegetable mixture to skillet at a time, gently pressing it out flat. Cook for approximately 3 to 4 minutes or until the edges begin to brown. Then flip each over and cook another 3 to 4 minutes until  each begins to brown on the bottom. Serve topped with some hot sauce.
