Delicious recipes containing beetroot are few and far between. Though it is known for its anti-inflammatory properties, it’s an acquired taste and one that most people choose to ignore. But this recipe will bring old Beet back into your life, for good!
But why should we eat it? Beetroots are known to contain special phytonutrients called betalains and it’s these nutrients which provide the body with antioxidants as well as anti-inflammatory support, which is fantastic for those who suffer from skin conditions such as eczema or bone and joint conditions such as arthritis and rheumatoid Arthritis. Beetroot also lowers high blood pressure and helps to fight heart disease.
So it’s safe to say that beetroot is your friend and this drinking this juice regularly should prove it!
Ingredients: (Makes 1 litre of juice)
- 1 beetroot (cooked)
- 1/4 purple cabbage
- 5 stalks of celery
- 5 medium -sized carrots
- 1 – 5 inches of ginger depending on your tolerance for it.
- 1 lime
- 1 apple
Chuck all the ingredients into your blender or juicer together. The beetroot will turn it a deep, blood-like red. If you use a blender, use the fibrous pulp to make a soup. Simply put some stock in a big pot and add the pulp to it. Boil for a while, and add some chilli if you like a kick. You could also eat this as a cold soup, so chill once cooked. It’s delicious and healthy and can be drunk every morning or as often as you like. It really does boost the energy levels, so makes a great start to the day or the week and can be a fantastic revitaliser after a heavy night out: the morning after the night before!
Obviously you can change the vegetables accordingly, but beetroot is the main man in terms of making an anti-inflammatory drink.
Be warned: Beetroot stains very easily, so we don’t advise making this juice if you’re wearing white – cover up first!
