Yesterday Anna Avolover posted a gorgeous recipe we can’t wait to try out. She said that ‘delicious is an understatement’ for this meal and once you see the ingredients, you’ll not only agree, you’ll be salivating for this dish all over the place like we were! Tangy, zesty, ridiculously easy to whip up: wholesome goodness in abundance!
Baked Sweet Potato with Avocado Salsa:
What you’ll need:
- black beans,
- Red and green peppers,
- scallion onions (spring onions)
- chilli flakes and
- juice of one lime.
Bake your sweet potato until the skin is crunchy and the inside is soft and fluffy. There is nothing worse than a bake potato which isn’t cooked properly so give it at least 40 minutes. Don’t worry, you cannot overbake a potato! Now, cut up the rest of your ingredients, add the beans and a sprinkle of chilli flakes. Squeeze the lime and toss together. When the potato is ready, drizzle with some Almond oil and add your delicious topping. You might want to make two per serving – and why not! It’s full of goodness and as it’s all vegetables, you can eat as much as you like as you don’t have the bad stuff – to worry about! Yum! Yum!
