Ok, so we’ve gone a bit aquafaba-flippy over here at Planetfem simply because we think this discovery is the best thing ever for vegans who like to cook and for those poor people (like your writer) who like to eat but have an egg allergy! This is one of the most delicious recipes we’ve found – aquafaba ice cream!
Remember that while the chickpea brine looks and smells gross pre-whisking, post-whisking it’s flavourless and odourless! So don’t worry: your ice cream will taste of yummy strawberries and not chickpeas!
We found this brilliant recipe from the now famous, aquafaba fan club Facebook group: Vegan Meringue – Hits and Misses! where you can find a wicked selection of tried and tested recipes, all proving that this discovery is indeed aqua-fabulicious! (haha – sorry, y’all know I can’t resist a good pun!)

Aquafaba Ice Cream
What you need:
3/4 cup chickpea water (aquafaba)
260 gr. fresh strawberries (without the leaves), mashed to a smooth puree
¾ cup sugar (adjust to taste)
How to make it:
- Put the chickpea water in a strong mixer bowl.
- Start whipping at slow speed and gradually increase the speed.
- Whip until soft peaks are formed.
- Gradually add the sugar.
- Add strawberries puree and mix until fluffy, about 6-8 min.
- Freeze at least 6 hours. Grab a spoon and do not expect to want to share it with anyone!
